We were in a bit of a panic over the weekend. We had picked over a dozen cucumbers from our garden, and had no clue what to do with them all. We aren't a pickle family, so canning them was out of the question. Jordan started searching online and he found a bare-bones recipe for a cucumber cooler. Here is our take on this recipe he found:
4 cucumbers, peeled with seeds removed
Juice from 4 limes
2/3 cup water
1/3 + 2TBSP Sugar
10 Ice Cubes
Blend all ingredients until smooth. Garnish with fresh mint. Serve immediately.
Even the kids drank this up in two seconds flat. I think it is safe to say that we'll be whipping this drink up again real soon.
