Mac & Cheese

Yum. I don't think I will ever make Macaroni and Cheese from the box again, that is if I can help it. Jordan's mom showed me this simple way to make it from scratch. It takes no time at all and tastes a million times better! We had this cheesy goodness for lunch. Jordan insisted on adding a few chopped up hot dogs. That little kid in him lives on. Lily seems to favor the flavor too. She will eat pretty much anything if it was on one of our plates first. She's funny that way. I think we are coming to an end with the pureed baby food.


***Here is the recipe: (It makes a lot, so you could half it if you want )
1 16 oz bag elbow macaroni
1 egg
1 1/2 cup milk
Shredded cheese. (I do this by taste, so start by grating 1/2 to 1 lb for the full recipe and go from there.)

Start by boiling your macaroni. Once the macaroni is cooking you can mix your egg and milk in a separate dish. (If you are making a smaller batch, just omit the egg. I don't think it tastes any different without it.) When the macaroni is cooked to how you like it, drain the water and return the macaroni to the pan. Over low heat, stir in your egg/milk mixture and then slowly add your shredded cheese. Keep stirring and adding the cheese and there you have it. I usually stir for about 5-10 minutes after all the cheese is added to make sure the egg is cooked. Season with salt and pepper and enjoy. :)
