What's Cookin'!

My sisters-in-law have inspired me: They post recipes on their blogs so others can revamp their weekly menus. Its sort of a recipe exchange kind of thing. I thought it'd be fun to participate so here we go. :)

Soy Chicken Rotini Pasta
Makes 4-6 servings

1 TBSP canola or vegetable oil
2 chicken breasts, cut into bite-sized pieces
1 green bell pepper, chopped
1 onion, chopped
1 clove garlic, minced (can use more or less depending on preference)
1/3 cup soy sauce
1/3 cup teriyaki sauce
2 TBSP water
2 TBSP brown sugar
8 oz. Ritoni pasta (can use any kind of pasta)
Salt/Pepper

Cook pasta according to package directions. In a small bowl, mix soy sauce, teriyaki sauce, water, and brown sugar. Set aside. Meanwhile, heat oil in large skillet on med-high heat. Add chicken, garlic, salt/pepper, and simmer 5-6 minutes, or until chicken is cooked through. Add chopped vegetables, (onion and pepper) and soy sauce mixture. Simmer on lower heat setting until sauce is bubbling (a few minutes). Combine cooked pasta with chicken and sauce mixture and serve. Makes 4-6 servings.

I am a huge pasta-lover and I really enjoy recipes with an Asian twist, you know with the soy sauce kind of taste. This recipe is one that I just threw together and was really pleased with how it turned out. Don't be afraid to adust the recipe to how you like things. Have fun! Hope you like it too. :)

  1. Thanks Taraleigh for joining the gang! I'm excited to try your recipe, it sounds great and we are all pasta lovers too! I'm just waiting for my stove to be installed so I can boil water, it may be another few weeks. ugh!
